General Notes:
1.) While mostly taken for granted when speaking about SLRs the Canon EOS M's functionality beyond the above specs includes:
  • the camera offers multiple white balance presets as well as a custom setting
  • manual, half and automatic exposure modes are all available as well as several program modes
  • the cameras feature an electronic shutter (reduces release lag)
  • the cameras feature a tripod socket.
AF/MF and IS modes are dis- or enabled via camera menu instead of the usual switches on the lens.
2.) Magic Lantern Firmware (as of v2.3) is a firmware tweak capable to add or enhance a huge list of features to your camera. Unlike the earlier firmware hack for the EOS 300D Magic Lantern doesn't install into the ROM, but resides on the memory card to be loaded on every camera start. Among its tweaks are:
  • Audio: audio meters, manual audio controls, selectable input source (internal, internal+external, external ...), audio monitoring via A/V cable
  • Exposure: zebras, false color, histogram, waveform, spotmeter, vectorscope
  • Focus: focus peaking, zoom while recording, trap focus, rack focus, follow focus, stack focus
  • Movies: Bitrate control, movie logging (Exif-like metadata), auto-restart after buffer overflow or 4GB limit, HDR video, advanced FPS control
  • LiveView: contrast, saturation, display gain for using LiveView in darkness
  • Cropmark Images: user-editable overlays to assist framing and composition
  • Bracketing: HDR bracketing, focus/exposure stacking
  • Timelapse: intervalometer (for photos and movies) with adjustable start delay (up to 8h), bulb ramping (manual and automatic), recording at FPS down to 0.2 FPS, silent mode
  • Astro- and night photography: bulb timer for very long exposures (up to 8h)
  • Info displays: focus and DOF info, CMOS temperature, shutter count, clock
  • Strobist: enhanced flash exposure compensation (up to -10 to +3 EV, this depends on the camera)
  • Power saving: Turn off display or reduce backlight in LiveView during idle times
  • extended control for ISO (down to ISO25), shutter, white balance and other image settings
  • remote release with LCD face sensor and audio trigger (without extra hardware)

3.) The EOS M features a menu selection to "shoot without lens". This will allow shooting with any lens mechanically adapted, using the controls provided by the lens itself. Sounds like even mounting old Sigma EF lenses, that will usually give ERR99 with DSLRs, will work (ofc. still limited to fully open aperture, since not featuring manual control rings, and most likely in manual focus mode only).
4.) To mount your existing EF and EF-S lenses to the EOS M you'll need the Canon Mount Adapter EF-EOS M. There seem to be some limitations though, Canon published a huge list of lenses which will not focus properly or at least as fast as usual on the M3 and M10 [source]. On the same page you'll find a selection of aftermarket adapters as well.
Refer to System Cameras > Mirrorless > EF Lens Adapters/Mirrorless Camera Core Specs Compared for a quick 'n' dirty cross brand reference.
Refer to System Cameras > Mirrorless > 3rd Party Lenses for a list of available EF-M mount aftermarket lenses.
